It’s an exciting time for vegan food. There’s a popular saying in the vegan community: “Anything you can eat, I can eat vegan.” It’s a favorite of mine because living vegan doesn’t mean giving up on all the foods that you’ve grown to love, it means replacing old favorites with new ones.

One of the best things about deciding to live vegan is experimenting with new foods and recipes that play around with both taste and texture. The rise of veganism has also meant the rise of creative and delicious vegan recipes not just from experienced chefs, but also home chefs. Which is great news for vegans like me who likes to taste all the latest food trends.

In choosing which recipes to share, I picked two categories to share from — meat and cheese — because these categories have seen big changes in tastes and cooking techniques over the past few years. Here are a few recipes to get excited about that really show the versatility of modern-day vegan cuisine.

Vegan cheese has come a long way in the nearly thirteen years that I’ve been vegan. In the early days, there weren’t many options for vegans who wanted a replacement for cheese and the ones that were available weren’t all that great.

Thankfully, that’s a thing of the past. These days it’s possible to find a wide selection of dairy-free cheeses at large, well-stocked grocery stores. But vegan cheese innovation isn’t just popping up at local markets; it’s showing up in kitchens everywhere.
